A juicy, flavor-packed chicken recipe using our handcrafted Caribbean Epis. This dish is perfect for lunch, dinner, or weekend cookouts — smoky, herby, and full of island flavor.
Ingredients:

1 whole chicken (cut into pieces) or 2 lbs chicken thighs

3–4 tablespoons Epis (Green Seasoning / Sofrito)

1 tablespoon lime or lemon juice

1 teaspoon salt (adjust to taste)

1 teaspoon black pepper

1 tablespoon oil (optional, for grilling)
Instructions:

Clean & Prep Chicken
Rinse chicken with water and a splash of lime or vinegar. Pat dry with paper towels. -
Marinate with Epis
In a large bowl, coat the chicken pieces with Epis, salt, pepper, and lime juice. Mix well so every piece is fully coated.
Cover and refrigerate for at least 2 hours (overnight is even better). -
Grill or Bake

Grill: Preheat your grill to medium-high. Lightly oil the grates and grill chicken for about 6–7 minutes on each side or until fully cooked.

Oven: Preheat oven to 400°F (200°C). Place chicken on a lined baking tray and roast for 35–40 minutes, flipping halfway through.

Add Scotch bonnet pepper to the Epis before marinating if you like it spicy.
